I think I get it. I worked out that there are lots of parameters that affect color, but aren't called color :) I am very new to all the substance jargon of nodes and graphs...Thanks everyone!

Sorry, I have actually been able to find this in the property editor for some materials, but not for others. The above example I was actually able to edit the color. Is it just not always available...
