Wendy, you mean that the topstitching disappears while you have simulation on? That is normal behavior. It shows when you have simulation stopped.
Sure you can. You just need to split the strip in the middle and sew or un sew to open or close it.
I believe the best way is to model them in another 3D software and import them as avatars so the fabric can wrap around the foam blocks.
Why don't you use a strip of fabric as the zipper tape. That way any trim can be glued onto that strip of fabric.
I suggest you post this on the questions forum to get more answers and explain what is that you are trying to accomplish so we can see what is not working vs. what you want to do.

Why do you need to fold it? You can increase thickness and it looks folded, unless you want to convey the actual construction method to manufacturing.
