The tools backgrounds are all black and gray, not easy on the eyes, how do i change it to make it white so i can see the icons clearly and the words in black instead..

esristhi, I don't think this is something you can change.
When you get used to the UI you will learn to use shortcuts instead for the most common tools or even create your own shortcuts.
Give it a try.

I think you can only change the Font not the color scheme of the UI.
You can find the font settings from:
Main Menu ▶ Settings ▶ User Settings ▶ User Interface
Also if changing the font doesn't correct the darkness of the UI you may need to color correct your display monitor to make sure the brightness/contrast isn't causing the UI to become darker than it really is. If eyeballing the settings doesn't correct the monitor you may need a hardware calibration tool like the Datacolor SpiderX.
Also you might want to request a custom theme setting in the Product Feedback forum if you prefer something other than the default dark gray UI.
