Do you have any tips on how to create a similar fabric?

  Create a simple collar pattern and apply particle hair with a long strand and diameter to the pattern piece, apply a color map to the hair strand and you will get this result. I suggest use external software to drive a collision model and re-import as you can groom the strand better in CLO3D vray there are no groom tools for hair/fur or velocity physics constraints you can tweak like curl etc.
