Top stitch showing on wrong side of collar
My collar is double sided but I need the top stitching to appear on the top of the collar not on the bottom, does anyone know how to fix this?

There two ways to fix this. Your default topstitching is configured to be applied on the right side of the fabric. Most likely your collar pieces have the back side of the fabric facing outwards. You can fix this by either reversing the normal for the collar pieces by selecting and right clicking on them and select Reverse Normal, or you could go to the topstitch settings and select the Configuration Face to be Back
